Ingredients (2 persons)
- 100g bulgur
- 1/2 onion, finely diced
- 1/2 cucumber, remove seeds, finely diced
- 1 tomato, finely diced
- 1 Tbsp tomato paste
- 1 Tbsp pepperbell paste
- 2 Tbsp olive oil
- a squirt of lemon juice
- 1 Tbsp paprika
To serve
- fresh parsley
Instructions
- Add bulgur to a pot, add already boiled water until water rose 2cm above bulgur
- Heat up a pan, saute the onion with some oil
- Add pepperbell and tomato paste to the pan
- Deglaze with some water
- Add content of pan to the bulgur
- Remove the seeds from the cucumber and dice it to cubes
- After bulgur has cooled down, add the diced tomato, cucumber and lemon juice
- Add salt, pepper and paprika
- Serve with chopped parsley
