Moroccan Lentil Quinoa Soup

Ingredients (serves 4 people)
- 1 onion, finley diced
- 5-6 garlic cloves, finely diced
- 3 carrots, diced
- 1 red bell pepper, diced
- 1 chili, diced
- 1 can diced tomatoes
- 2 ts cumin
- 1 ts chili powder
- 1 ts coriander
- 1 ts cinnamon
- 1 ts thyme
- 1 ts turmeric
- 1 ts honey
- 55g quinoa
- 200g red lentils
- 1L broth
To serve
- herbs (choose either cilantro, parsley, scallions, mint)
- squirt of lemon/lice juice
- yogurt (optional)
- radishes (optional)
- raisins (optional)
Instructions:
- Saute onion and garlic
- Add spices, stir until fragrant
- Add carrots, bell pepper and chili, stir for 2m
- Add tomatoes and broth, add lentils and quinoa
- Bring to a boil, then let it simmer until the lentils are cooked (around 15m)
- Serve after the stew thickened
