Pumpkin Soup

Ingredients (Serves 4 people)
- 1 red kuri squash (0.8 - 1kg)
- 1 onion, finely chopped
- 1 clove garlic, finely chopped
- 1 thumb sized ginger, finely chopped
- 2 Tbsp butter -1L broth
- 100ml cream
Optional
- Juice of 1 orange
- 1 ts red curry paste
To Serve
- Fresh parsley
Instructions
- Cut squash to small chunks, remove seeds
- Heat up pot, add butter, saute onion, garlic and ginger
- If you’re using red curry paste, add after a minute
- Add squash, wait for a minute until deglazing with the stock
- Bring to a boil then simmer for 15-20m
- Add cream (and optionally the orange juice)
- Use blender and serve with fresh parsley
