Ingredients
- 1 eggplant
- 2-3 Tbsp olive oil
- 1 Tbsp soy sauce
- 1 ts ras el-hanout
Alternative
Use the seasoned soy sauce for and add ground ginger instead the sauce above
Instructions
- Pre-heat oven at 175°C
- Cut eggplant in half
- Cut the flesh of the eggplant in a diamond shape
- Add ingredients for the sauce to a small bowl and mix well together
- Cover the eggplant with the sauce
- Bake for around 20-25m
