Ingredients

• One onion, chopped to small pieces
• Two garlic cloves, chopped
• 700g sweetpotatoe, chopped into 1cm chunks
• 3-4 carrots, chopped into small discs
• 1 can chickpeas
• around 1.3l broth
• 1-2 Tbsp lemon juice
• Fresh coriander
• Optional: 1 chili pepper

Spices

• (White) pepper
• Coriander
• Cumin

Instructions

1. Add everything except coriander and lemon juice to the crockpot
2. Cook for 4 hours on high (or 8h on low), blend everything to a fine soup
3. Add the lemon juice
4. Serve with chopped coriander
